CHEESECAKE

This is the recipe for my triple choc Irish cheesecake:

BASE: 1/2 pkt plain chocolate cookies.
1/2 pkt plain cookies of your choice.
100gms butter, melted.
Crush the cookies into fine crumbs, add butter, mix, and press firmly onto base and 2/3 way up sides of a springform pan.

TOPPING: 2 blocks cream cheese - 500gms total, softened.
1/2 cup caster sugar.
1/2 cup double cream.
2 large eggs.
1+1/2 teaspoons vanilla paste OR extract.
100gms good milk chocolate.
100gms good dark cooking chocolate.
80mls Irish whiskey.
1 cup white chocolate - grated, to decorate.
Place first 5 ingredients in large bowl, and using electric mixer on medium, beat until well combined - 2-4 minutes. Add whiskey and mix well with spoon.
Place both broken up milk and dark chocolate in small bowl and melt either over a pan of simmering water stirring constantly, or in the microwave. Do not get any water in the chocolate, or it will become useless, and if using a microwave, do in 10 second bursts, stirring in between. Do not overheat or burn the chocolate, as it can become very bitter.
Add melted chocolate to the cheese mixture, stir well and spoon into the prepared base. Smooth the top.
Place in centre of your pre-heated oven on 150 degrees celcius, cook for 1 hour, turn off oven and leave cheesecake in oven for a further 1 hour.
Remove from oven, allow to cool on bench, remove from tin, cover and refridgerate.
To serve, top with grated white chocolate.
